Mediterranean Skillet Chicken
Mediterranean Skillet Chicken is an easy dinner. Made with 2 tbsp. olive or vegetable oil, 4 skinless boneless chicken breast halves (1 lb.), 1 can (14 1/2 oz.) italian style stewed tomatoes, undrained, 1/2 c. sliced ripe olives and 1 tsp. grated lemon peel, this recipe delivers authentic, satisfying flavors. Heat oil in 12 inch nonstick skillet over medium high heat.
Cook chicken in oil 5 minutes, turning once, until brown.
Stir in remaining ingredients.
Heat to boiling; reduce heat to low.
Cover and simmer 15 to 20 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.
