Marshmallows
Marshmallows is an moderately easy dinner you can prepare in about 1 hour 26 minutes. Made with box knox #1 or plain gelatin (4 envelopes), . cold water, c. granulated sugar, . hot water and of cream of tartar (1 tsp. vinegar will do instead), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Put gelatin and cold water in large crockery bowl; let stand. Cook sugar, hot water and cream of tartar until it threads well. When it threads, hard ball stage, add to gelatin and beat constantly for about 15 minutes on medium speed with electric mixer.
Add vanilla and coloring; mix.
Line pan with buttered waxed paper and sprinkle heavy with powdered sugar.
Pour the marshmallow mixture into it and sprinkle top with more powdered sugar.
It may be cut with a knife or scissors when cool.
Cut off in strips and then cut the strips into pieces.
Dip each piece in powdered sugar and the pieces won't stick together.

I use a 9 X 13 pan.
