Baked Salmon Croquettes
Baked Salmon Croquettes is an moderately easy dinner. Made with 1 (15 1/2 oz.) can red salmon, 1/4 c. butter or margarine, 2 tbsp. finely chopped onions, 1/3 c. all-purpose flour and 1 c. milk, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Drain salmon.
Melt butter in heavy saucepan over low heat. Add onions and cook until tender.
Add flour, stirring until smooth.
Cook 1 minute, stirring constantly.
Gradually add milk. Cook over medium heat, stirring constantly until thickened and bubbly.
Stir in salt and pepper.
Set aside.
Remove skin and bones from salmon and flake salmon with a fork.
Add lemon juice, 1/2 cup corn flakes and the white sauce, stirring well. Refrigerate mixture until chilled.
Shape into croquettes.
Roll in remaining corn flakes.
Place on lightly greased baking sheet. Bake at 400Β° for 30 minutes.
