Yeast-Raised Irish Soda Bread

Set aside 1 cup flour. In large bowl, mix remaining flour, undissolved yeast, sugar, salt and baking soda. Heat water, buttermilk and butter until hot to touch, 125° to 130°.
Stir into dry mixture. Mix raisins and enough reserved flour to make soft dough. Cover bowl; let rest 10 minutes.
Knead 10 times on lightly floured surface. Form 5 to 6 inch diameter ball. Place on greased baking sheet. Cover; let rise in warm, draft-free place until doubled in size, about 1 hour. Sprinkle dough lightly with 1 tablespoon flour.
With sharp knife, make 1/8 inch deep cross in top of dough.
Bake at 350° for 30 minutes or until done. Remove from baking sheet and cool on wire rack.
