Wilted Spinach Salad
A Southern-style spinach salad tossed with hot bacon dressing that just barely wilts the leaves. Crisp egg, smoky bacon, and a tangy warm vinaigrette make it a steakhouse classic.
Dice bacon and cook crisp; drain and set aside.
Blend flour and bacon grease over low heat.
Add buttermilk and cook until thick.
Mix sugar, salt and vinegar; add.
Wash, dry and chill spinach in advance.
Just before serving, tear spinach into bite size pieces.
Pour hot dressing over spinach and toss.
Sprinkle with bacon and serve immediately.
(You may substitute sour cream or plain yogurt for buttermilk.)
