Boil sugar, corn syrup, and water to hard-crack stage without stirring after the sugar dissolves.
Remove from heat and stir in flavoring and a small amount of color.
Drop small rounds onto a silicone mat or parchment and let them set until hard.
Mix citric acid, malic acid, tartaric acid, and fine sugar for the sour coating.
Toss the cooled candies quickly in the coating and store airtight.
