Timus
Timus are Indonesian sweet potato fritters made from mashed sweet potato, tapioca, and palm sugar. They fry to a crisp orange shell with a tender center, and a little coconut or vanilla in the dough makes them fragrant without hiding the sweet potato.

Steam or boil sweet potatoes until very tender, then mash while warm and let excess steam escape.
Mix in tapioca starch, sugar, salt, and vanilla or coconut until the dough holds together.
Shape into ovals, tucking a small piece of palm sugar into the center of each if desired.
Fry in moderate oil until golden and crisp, then drain and serve warm.
