Sarbhaja
Sarbhaja is a Bengali sweet made from layers of milk cream and khoya fried in ghee, then scented with cardamom syrup. The result is golden, flaky-edged, rich, and festive.

Simmer milk slowly, lifting off the cream layers as they form and reducing the rest into khoya.
Stack the cream layers with a thin spread of khoya between them and chill until firm.
Cut the slab into squares or diamonds while the ghee heats.
Fry the pieces gently in ghee until golden and crisp at the edges.
Dip briefly in cardamom-saffron syrup and garnish with pistachio.
