Pyeonsu
Pyeonsu are neat square Korean summer dumplings filled with beef, cucumber, mushroom, tofu, and pine nuts. Served chilled or lightly cooled, they are delicate rather than fried.

Salt cucumber strips briefly, squeeze dry, and mix with tofu, mushroom, beef, green onion, soy, and sesame oil.
Place small portions of filling in square wrappers and fold into tidy packets.
Steam or boil the dumplings gently until the wrappers turn translucent and tender.
Cool the dumplings slightly so their summer texture stays clean.
Serve with a soy-vinegar dipping sauce and a few pine nuts on top.
