Peppermint Meringues
Peppermint Meringues is an easy dinner. Made with 2 large egg whites at room temperature, 1/8 tsp. salt, 1/8 tsp. cream of tartar, 1/2 c. granulated sugar and 2 peppermint candy canes; crushed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 225Β°.
Line two cookie sheets with foil.
With an electric mixer, beat the egg whites, salt and cream of tartar until soft peaks form when beaters are lifted.
Beat in sugar a little at a time until mixture is smooth, shiny and very stiff, about 6 to 8 minutes.
Drop teaspoonfuls onto cookie sheets (or pipe with pastry bag and star tip) close together.
Sprinkle crushed candy canes over tops.
Bake 1 hour, then turn off oven. Open oven door slightly and let meringues cool.
Store in covered containers in a dry place.
Makes approximately 4 dozen.
