Meggie'S Favorite Chicken Cordon Bleu is an moderately easy dinner. Made with 8 chicken breasts, skinned and boned, 8 tsp. fresh parsley, 4 oz. part-skim mozzarella cheese, into 8 thin slices, 4 oz. boiled ham, cut into 4 thin slices and halved and 1 tbsp. low-cal, low-fat mayonnaise (salad dressing), this recipe delivers authentic, satisfying flavors. Preheat oven to 325Β°.
Pound breast until thin, sprinkle with parsley.
Top with cheese and ham.
Roll up tightly.
Stir together mayo and water in shallow dish.
Roll each chicken fillet in mayo mixture, then bread crumbs.
Arrange chicken rolls seam down on baking sheet.
Bake 25 to 30 minutes until cooked through. Heat soup and water.
