Matzo Brei (For Two) is an easy dinner. Made with 3 matzos, water or milk, 2 eggs, well beaten, salt and pepper to taste and 3 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Soak matzos in lukewarm milk or water until soft. Drain well. Stir in eggs, salt and pepper.
Heat butter in an 8-inch skillet, pour in mixture, cover and cook over moderate heat until the underside is well browned, about 10 minutes. Turn carefully with a spatula or pancake turner; brown the other side. Serve hot with honey, maple syrup or sprinkle with sugar and cinnamon.
