Lo-Fat Broccoli Skillet Quiche
Lo-Fat Broccoli Skillet Quiche is an moderately easy dinner. Made with 3 tbsp. sunflower margarine, 1/4 c. onion, chopped, 1 1/2 c. broccoli, chopped, 1/2 c. tomato, chopped and 1/2 c. skim milk mozzarella cheese, shredded, this recipe delivers authentic, satisfying flavors. In Teflon-lined 9-inch skillet, melt margarine over medium heat.
Add onion and cook until tender.
Add broccoli, tomato, cheese, salt and pepper.
Pour imitation eggs over vegetable-cheese mixture; do not stir.
Reduce heat to low. Cover and cook 10 minutes or until quiche is set.
Remove from heat and let stand 5 minutes.
Cut in wedges to serve.
