Made with 2 c. dry black-eyed peas, 3/4 c. salt pork, bacon or ham, 1 c. diced onions, 1 c. long-grain or brown rice (uncooked) and 1/4 tsp. dried thyme, this recipe delivers authentic, satisfying flavors. Put peas and 8 cups or more water into a covered pot and bring peas to a boil over high heat, then reduce to simmer about 45 minutes or until tender.

While peas are cooking, cut meat into cubes and dice onion. Put in skillet and fry 5 minutes, until crisp.

When peas are done combine meat, onions, rice, thyme, red pepper and peas and stir.

Simmer another 25 minutes until rice is done and liquid is absorbed.
