Herbed Leg of Lamb
Herbed Leg Of Lamb is an moderately easy dinner. Made with 5 1/2 to 6 lb. leg of lamb, 2 cloves garlic, 1 tbsp. dry mustard, 1 tsp. salt and 1/8 tsp. ground pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Rub all surfaces of lamb with 1 clove garlic.
Cut this clove and one more into slivers.
Slit skin of lamb at intervals and insert garlic slivers.
Blend next 6 ingredients to a paste. Spread over surface of roast.
Place lamb on a rack, covered, in roasting pan and roast for 2 to 2 1/2 hours at 325°.
Check with roasting thermometer (150° for medium rare to 175° for well done). Serves 6 to 8.
