Ham Soup
Ham Soup is an moderately easy dinner. Made with 6 slices bacon, 1 medium onion, thinly sliced, 1 pound beef shank, 3/4 pound ham, cubed and 6 cups water (or more), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Fry bacon, crumble and set aside.
Add onion to 2 tablespoons of the bacon drippings and cook until tender.
Add beef shank, ham, water and salt.
Cover and simmer 1 1/2 hours.
Remove meat from shank and dice.
Skim fat from soup.
Add beans, potatoes and garlic and simmer 30- minutes covered.
Add cut sausage, bacon and simmer 15 minutes. Serves 10-12.
