Grandma's Butterscotch Pie
Grandma'S Butterscotch Pie is an moderately easy dinner. Made with 2 c. packed dark brown sugar, 1/2 c. margarine, 5 eggs, separated, 4 tbsp. flour and 2 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Stir brown sugar and margarine in heavy skillet over medium heat until sugar begins to caramelize, stirring constantly.
Mix flour, cornstarch, egg yolks and a small amount of milk in a bowl. Stir in remaining milk gradually.
Very slowly stir into carmelized mixture.
Cook until thickened, stirring constantly. Pour into pie shell.
Beat egg whites and cream of tartar in mixer bowl until soft peaks form.
Add sugar slowly, beating constantly, until stiff peaks form.
Spread over pie.
Seal to edge of crust.
Bake at 350Β° until meringue is lightly browned.
