Cucumber and Onion Salad
Cucumber And Onion Salad is an easy dinner. Made with 3 firm thin cucumbers, 1 medium white onion, white vinegar, salt and sugar to taste and freshly ground black pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Slice cucumbers thin (peeling or not as you wish).
Slice onion into rings.
Place cucumber slices in between paper towels and squeeze or press hard.
Try to remove as much moisture from cucumbers as you can.
Place squeezed cucumbers in bowl and add the onion rings.
Cover with vinegar to which a small amount of cold water and a hint of sugar have been added.
Add salt; sprinkle freely with pepper.
Refrigerate and let stand several hours; the colder the better.
An excellent side dish or fabulous accompaniment for cold meats.
Makes 4 to 6 servings.
