Creole-Style Flounder(Serves 6) is an moderately easy dinner. Made with 1 large green pepper, sliced in thin strips, 1 1/2 c. sliced green onions (including tops), 2 tbsp. butter or margarine, 1 (14 1/2 to 16 oz.) can tomatoes, chopped (2 c.) and 1 (8 oz.) can tomato sauce, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook green pepper and onions in butter until tender, but not brown.
Stir in tomatoes, tomato sauce, salt, pepper, thyme and bay leaf.
Simmer gently for 15 minutes.
Remove bay leaf. Arrange fish in lightly greased, shallow baking pan.
Season with additional salt and pepper.
Spoon sauce over fillets.
Bake in preheated 375Β° oven for 15 minutes or until fish flakes easily with a fork.
Stir peas, if used, into rice.
Serve fish over beds of fluffy rice.
