Unfold and lay out 1 pie crust on a cookie sheet.
In a large bowl, combine stew meat, onions, potatoes and sage (sprinkle with salt and pepper to taste).
Potatoes should appear green with sage. If not, gradually add 1 teaspoon more at a time until they do. Pile mixture high onto center or pie crust.
Lay second pie crust over mixture.
Seal the 2 crusts together by folding bottom crust over top and press down.
Make a few small slits in top crust. Cook in 350Β° oven until juice runs freely from bottom of crust (about 1 hour) and crust is dark golden.
