Cesky Cerny Chleb(Old World Black Bread)
Cesky Cerny Chleb(Old World Black Bread) is an impressive dinner. Made with 3 3/4 c. rye flour, 3 3/4 c. all-purpose flour, 2 pkg. active dry yeast, 1/2 c. warm water and 1/2 c. unsweetened cocoa, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine rye flour and all-purpose flour in a large bowl; reserve 3 cups flour mixture.
Sprinkle yeast over 1/2 cup warm water; stir until dissolved.
Set aside.
In a large bowl, stir together reserved 3 cups of flour mixture, cocoa, sugar, caraway seed, salt and instant coffee.
Combine 2 cups water, vinegar, dark corn syrup and butter or margarine in a medium saucepan.
Heat over low heat just until warm.
(Butter or margarine does not need to be completely melted.)
Add to cocoa mixture and blend well; add dissolved yeast and stir until thoroughly combined.
Stir in enough additional flour mixture, 1 cup at a time, until dough no longer clings to side of bowl.
Turn onto a lightly floured board; cover and let rest for 10 minutes.
