Beef Salami
Beef Salami is an moderately easy dinner. Made with 5 lb. hamburger, 2 1/2 tsp. whole mustard seed, 2 1/2 tsp. coarse ground black pepper, 3 tsp. liquid smoke and 5 tsp. (heaping) morton tender quick salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Mix all ingredients together thoroughly and refrigerate for 3 days.
On the third day, take out and knead for 5 minutes, then return to refrigerator.
On the morning of the fourth day, shape into 3 rolls.
Put each roll in separate sheet of foil (shiny side against hamburger).
Prick foil in several places with fork. Place on rack with drip pan under it and bake for 3 to 3 1/2 hours at 200Β°.
