Au Gratin Potatoes
Au Gratin Potatoes is an moderately easy dinner. Made with 5 lb. peeled and sliced potatoes, salt and pepper to taste, 1 lb. medium cheddar cheese, 1/2 gal. milk and 1 stick margarine, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Peel and slice potatoes, but not real thin.
Wash and cook until slightly tender.
Drain potatoes and put into deep baking pan (about 5 to 6-inches).
In a heavy pan, put milk and butter and heat until real hot (making sure you don't scorch it), then add Cheddar cheese, stirring constantly to keep it from burning.
When cheese has melted, remove from the heat and mix up some cornstarch with cold water and add to the milk mixture.
Thicken to desired thickness by placing back on the heat.
Then pour over potatoes and place in heated oven at 400Β° and bake until the potatoes are finished cooking and brown on top.
