Zupa Grzybowa(Mushroom Soup)
Zupa Grzybowa(Mushroom Soup) is an moderately easy dinner. Made with 1 lb. soup bones with meat, celery, carrots and onions (to make stock), 3/4 lb. dried mushrooms, 1 1/2 qt. water and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Wash mushrooms, slice and cover them with cold water for 2 hours.
Rinse bones and meat with cold water. Add the 1 1/2 quarts water to meat and vegetables.
Cook until both are tender. Strain meat and vegetables. Add stock to mushrooms. Simmer until mushrooms are tender.
Salt and pepper to taste.
Garnish with parsley. Serve with dumplings.
