Zucchini Relish
Zucchini Relish is an impressive dinner. Made with 16 c. unpeeled zucchini, 1 red pepper or pimento, 2 1/2 c. vinegar, 1 tbsp. dry mustard and 2 to 2 1/2 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Zucchini, onions and pepper should be finely chopped.
If desired, hot red pepper can be used in place of red sweet pepper or pimento.
Mix with salt; let stand overnight.
In the morning, wash in cold water and drain.
In large saucepan, combine vinegar, sugar, mustard, nutmeg, cornstarch, turmeric, celery seed and pepper.
Cook for 30 minutes, then add vegetable mixture and cook for 20 minutes.
Process and seal in hot jars.
Yields 7 pints.
