Zucchini Cooked with Wheat
Zucchini Cooked With Wheat is an moderately easy dinner. Made with 1-2 med. or lg. zucchini, 2-3 tbsp. oil, 1 onion, diced, salt, pepper, cumin and 1/4 c. cracked wheat #1 or #2, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Wash zucchini, peel if desired (good with skin).
Chop in small pieces, set aside.
Saute onion in oil, brown lightly. Add zucchini and spices.
Cover and cook,
Do not add water.
After 10 - 15 mins., zucchini will get tender and can be lightly mashed with a fork or masher.
Add tomato paste and wheat.
Cook until wheat is tender, stirring occasionally.
Ready to eat 45 - 50 mins. Good as a side dish anytime, especially on Fridays.
Extra summer zucchini are great.
Can be frozen, used later.
