Yellow Squash Casserole
Yellow Squash Casserole is an moderately easy dinner. Made with 8 c. sliced yellow squash, 1 tbsp. water, 1/2 c. chopped onion, 1 garlic clove, minced and 2 slices day-old bread, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 350Β°. Combine squash and water in a large microwavable bowl.
Cover with plastic wrap; vent.
Microwave on high for 6 minutes.
Place bread in food processor and pulse 10 times or until coarse crumbs form to measure 1 cup.
Combine the squash, 1/2 cup bread crumbs, sour cream, cheese, salt, pepper and soup.
Spoon squash mixture into a 2 quart casserole coated with cooking spray.
Top with the remaining bread crumbs.
Spray breadcrumbs with cooking spray.
Bake for 30 minutes.
Makes 12 servings. 85 calories, 1 g. fat, 1 g. fiber.
