Preheat oven to 350Β°. Combine squash and water in a large microwavable bowl.

Cover with plastic wrap; vent.

Microwave on high for 6 minutes.

Place bread in food processor and pulse 10 times or until coarse crumbs form to measure 1 cup.

Combine the squash, 1/2 cup bread crumbs, sour cream, cheese, salt, pepper and soup.

Spoon squash mixture into a 2 quart casserole coated with cooking spray.

Top with the remaining bread crumbs.

Spray breadcrumbs with cooking spray.

Bake for 30 minutes.
