Venison Cacciatore
Venison Cacciatore is an moderately easy dinner. Made with 1 1/2 lb. venison, 1 c. red wine, 1/4 c. olive oil, salt and pepper and vegetable oil, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Marinate the venison in the wine (red vinegar may be substituted), olive oil, salt and pepper to taste.
Remove the meat the next day and save the marinade.
Saute meat in oil in a large skillet until browned on both sides.
Remove from skillet and saute garlic.
Add meat, tomatoes, parsley, mushrooms, basil, marinade and basil.
Simmer for about an hour or until meat is tender.
