Vegetable Beef Soup
Vegetable Beef Soup is an moderately easy dinner. Made with shin or shank beef bone with meat on bone, 2 tbsp. salt, pepper to taste, 3 stalks celery, chopped and 1 onion, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cover bone with cold water; bring to a boil.
Skim residue. Lower heat to simmering temperature.
Add salt and pepper.
Cook over low heat, covered, for approximately 1 hour.
Add chopped vegetables.
Soak barley, changing water 9 times.
Drain and add to soup.
Simmer all ingredients for about 3 to 4 hours or until meat is tender.
Add noodles and spinach leaves.
Cook over low heat another 1/2 hour.
Taste to check on salt and pepper amounts. Serve with French bread.
