Tarragon Chicken Breasts
Tarragon Chicken Breasts is an moderately easy dinner. Made with 3 chicken breasts, boned, halved and skinned, 2 tbsp. butter, 1/4 c. flour, salt and pepper and 1 tbsp. chopped shallots or onions, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Sprinkle chicken with salt and pepper and dredge in flour; reserve remaining flour.
In large skillet heat butter, add chicken and brown on both sides.
Transfer to a heated platter. Add shallots to skillet and saute briefly.
Add wine.
Cook liquid over high heat until nearly evaporated.
Add reserved flour and make a thick paste.
Sprinkle with tarragon and stir in chicken broth.
Return chicken to skillet, cover and cook until tender, about 25 minutes.
