Sweet Potato Casserole is an moderately easy dinner. Made with 4 c. peeled sweet potatoes, thinly sliced, 1 tbsp. fresh onion, chopped, 1 1/2 tbsp. diet margarine, 1/2 c. milk and 1/4 tsp. lite salt, this recipe delivers authentic, satisfying flavors. 👨‍🍳 Instructions

Coat a 1 1/2-quart casserole dish with nonstick cooking spray. Layer sweet potatoes in dish; sprinkle onion evenly over top. Melt margarine and add milk, salt and pepper; pour evenly over potatoes.

Sprinkle parsley and Parmesan cheese over potatoes. Bake, covered, for 1 1/2 hours at 325°.

Turn heat up to 375°; remove lid and allow cheese to turn light brown before removing from oven.

Serves 6 (1/2 cup servings).
