Sicilian Meat Roll
Sicilian Meat Roll is an moderately easy dinner. Made with 2 beaten eggs, 1/2 c. tomato juice, 3/4 c. soft bread crumbs, 2 tbsp. snipped parsley and 1/2 tsp. dried oregano, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In bowl, combine eggs and tomato juice.
Stir in bread crumbs, parsley, oregano, salt, pepper and garlic.
Add ground beef; mix well.
On waxed paper or foil, pat meat to a 10 x 8-inch rectangle.
Arrange ham slices on top of meat, leaving a small margin around edges.
Reserve 1 slice cheese for top.
Tear up or lay slices of cheese over ham.
Starting from short end, carefully roll up meat, using paper to lift.
Seal edges and ends. Place roll, seam-side down, in 13 x 9 x 2-inch baking pan.
Bake at 350Β° until done (about 1 1/4 hours).
Center of roll will be pink due to meat.
Cut slice of cheese into 4 triangles; place on top of loaf.
Serves 8.
