Schwabisches Sauerkraut(Swabian Style Kraut)
Schwabisches Sauerkraut(Swabian Style Kraut) is an moderately easy dinner. Made with 2 lb. fresh sauerkraut, 2 or 3 apples, peeled and sliced, 1 large onion, sliced, 2 tbsp. butter or drawn-out pork fat and 1/2 tsp. crushed juniper berries or caraway seed, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Rinse sauerkraut with warm water, drain well.
Saute the apples and onion in butter or pork fat until soft.
Add juniper or caraway, sugar and the rinsed kraut.
Simmer, covered, 1/2 hour. Add potato, water or wine and salt.
Continue cooking until sauerkraut is tender to your taste (about 1 hour longer).
