Sauerkraut Stew
Sauerkraut Stew is an moderately easy dinner. Made with 1 lb. kielbasa (or 1/2 lb. beef and 1/2 lb. german sausage), 1 large yellow onion, 2 medium tart apples, 2 medium potatoes and 4 large carrots, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Slice and brown sausage in Dutch oven.
Add coarsely chopped onion, peeled and sliced potatoes and carrots sliced 1/2 inch thick.
While these saute a bit, drain and rinse sauerkraut and peel and slice apples.
Add to pot with apple juice.
Cook on low until carrots are tender, about 2 hours.
One pound beef stew meat browned with sausage is tasty.
I like to add 2 to 3 tablespoons brown sugar.
