Soak the cod (which should be as light colored as possible) for at least 48 hours.

Cut it into 2-inch pieces and put into 3 1/2 pints of water with the onions and garlic, sliced, and the bouquet garni. Bring to a boil and simmer for 15 minutes.

Dab the pieces of cod dry. Flour lightly and fry in very hot olive oil until golden brown. Transfer to the bottom of a gratin dish with fish slice.

Slice the leeks (the white part only) and brown slightly in the same pan.

Put them on top of the cod. Add the stock and plenty of pepper.

Put in a hot oven for about 20 minutes. Serve with mashed or boiled potatoes.
