Salamata is an old Siberian and East Slavic sour-cream porridge made with toasted flour. It is thick, tangy, buttery at the edges, and served hot in small bowls.
π Recipe adapted from Wikidata (Dish)
Warm the sour cream slowly in a heavy pan without letting it scorch.
Whisk in sifted flour a little at a time until the mixture is smooth and thick.
Add milk or kefir gradually and keep stirring over low heat.
Cook until the porridge turns glossy and butterfat begins to separate around the edges.
Serve hot with lingonberries and a small drizzle of honey if desired.
