Potato-Onion Bake
Potato-Onion Bake is an moderately easy dinner. Made with 3 tbsp. butter, 3 tbsp. flour, 1 small sprig thyme, salt and pepper to taste and 1 c. grated parmesan cheese or cheddar cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Melt butter in heavy saucepan or skillet.
Add onion; cook over low heat, stirring, until onion is soft but not browned. Blend in flour; cook, stirring constantly, over low heat for 3 minutes, or until flour is thoroughly cooked.
Add one-third of the hot milk; stir vigorously while cooking sauce over medium heat until thickened and it begins to bubble.
Add remaining milk, thyme, bay leaf, salt, pepper and nutmeg to taste.
Cook, stirring, until thickened and smooth.
Stir in grated cheese; heat until cheese has melted.
Strain through a fine sieve.
Makes about 2 2/3 cups.
