Potato Magics is an moderately easy dinner. Made with 3 lb. potatoes, peeled and quartered, 1 c. onions, chopped, 3 tbsp. olive oil, 1 c. cracker or bread crumbs and 2 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Place quartered potatoes in a large saucepan; add water to cover.

Heat to boiling.

Reduce heat and simmer over medium heat for 25 to 30 minutes or until potatoes are tender.

Drain water, mash potatoes and allow to cool.

Saute chopped onions in olive oil until clear.

Add onions, cracker or bread crumbs, salt and pepper to potatoes and remash them.

Coat a cookie sheet with a nonstick vegetable cooking spray.

Roll mixture into balls with your hands and place the balls on the cookie sheet.

Brush them with beaten egg yolks.

Bake until crusty brown, about 45 minutes in a 400Β° oven.

Serve as appetizer side dish, snack or even with brunch.

Yield: about 24 large or 72 small puffs.
