Potato Leek Soup
Potato Leek Soup is an moderately easy dinner. Made with 1 lb. potatoes, scrubbed and sliced, 3 or 4 leeks (white part and 1 inch green), split open lengthwise and sliced, 4 c. chicken stock (may use canned), 4 c. water and 1 to 3 tbsp. butter to taste, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In a large soup pot, combine potatoes, leeks, stock, water and butter.
Bring to a boil, turn down heat and let simmer for about 1 hour.
Stir occasionally.
Taste for seasoning and add salt and pepper if needed.
Mash some of the potatoes into the soup to thicken slightly.
Serves 6 to 8.
