Potato Balls(Komper)
Potato Balls(Komper) is an easy dinner. Made with 4 to 5 lb. peeled, raw potatoes, 2 tsp. salt, 1 c. oatmeal, about 2 c. flour and cut up bacon, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Boil lightly salted water in a large heavy kettle.
Grate (or grind) the potatoes and strain.
(Discard liquid.)
Empty the grated potatoes from strainer into a big bowl.
Add oatmeal, salt and enough flour to form balls in palm of your hand.
Use a large spoon dipped in cold water.
Put cut up bacon in middle of each ball; roll around so bacon is covered.
Place balls in boiling, salted water.
Let the water boil all the time.
Boil about 1 hour. Shake and use a wooden spoon to move balls around so they don't stick, carefully.
Serve with butter.
May be served with or without broth.
They can also be used when cold.
Slice and fry both sides in butter.
Makes about 12 dumplings.
