Pork Chops Cooked with Sour Cream
Pork chops rubbed with mustard, dredged in flour, and braised with onions in chicken stock before finishing in a tangy sour cream pan sauce. Hearty Eastern European comfort food.

Before frying, rub each pork chop with prepared mustard.
Then roll chops in flour.
In deep skillet, fry in butter until brown. Add chicken stock and onions.
Simmer, covered, on low heat for 1 hour.
Pour off liquid.
To this, add the sour cream.
Mix well. Don't let sauce boil after adding cream.
Sour cream should be at room temperature when added to the pan liquid.
Pour sauce over chops.
