Poor Man'S Caviar is an moderately easy dinner. Made with 1 (2 lb.) eggplant, 6 tbsp. olive oil, 1 tsp. garlic, finely chopped, 1/2 tsp. sugar and 1 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Preheat oven to 400°.
Bake eggplant on rack in center of oven for 1/2 hour, turning it over once or twice, until soft and its skin is charred and blistered. Cook onions in 4 tablespoons oil over moderate heat for 6 to 8 minutes,
Until soft, but not brown. Stir in green pepper and garlic and cook, stirring occasionally, for 5 minutes longer.
Remove from heat.
