Clean, rinse and pat the chicken dry.
Make a mixture of the finely chopped garlic, sage, rosemary, salt and pepper.
Stuff the chicken with 3/4 of the fresh herb mixture and the sliced lemon.
Tie chicken as you would a roast.
Rub the remaining herbs on the outside and between the legs.
Preheat oven to 400Β°.
Place the chicken in a roasting pan with the olive oil and bake until golden brown, about 1 1/2 hours.
Add the white wine and lemon juice and roast for 10 more minutes.
Remove chicken from oven; add chicken broth and simmer for 5 minutes over medium heat. Remove chicken from pan and reduce sauce by half.
At this point, add the butter and flour to thicken and finish the sauce.
