Pita Bread is an moderately easy dinner. Made with 4 1/2 to 5 c. flour, separated, 1 pkg. yeast, 1 1/2 tsp. sugar, 1 1/2 tsp. salt and 1 3/4 c. warm water, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In a warm mixer bowl, combine 2 c. flour, yeast, sugar, salt and water.

Blend until moistened, then beat by hand for 3 minutes. Stir in 2 1/2 to 2 3/4 c. flour to make firm dough.

Knead on floured board until smooth and elastic, about 10 minutes.

Cover dough with plastic wrap and towel.

Let rise for 20 minutes.

Punch down dough.

Divide into 12 equal parts.

Shape each part into a smooth ball and place on floured board leaving space between each ball.

Cover and let rise 30 minutes.

Preheat oven to 500Β°.

Roll each ball into a 6 inch circle.

Place 3 circles at a time on a cookie sheet and bake 3 to 4 minutes.

(They do not burn.)

Cool on racks.
