Pasta Amatriciana
Pasta Amatriciana is an moderately easy dinner. Made with 4 slices bacon (preferably thickly sliced), 1/2 to 1 c. chopped onion, 2 cloves minced garlic, 1 (28 oz.) can plum tomatoes with juice and pinch/shake of red pepper flakes, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In a large frying pan or medium saucepan, fry bacon until crisp; remove from pan.
Set aside.
Drain pan of all but 2 to 3 tablespoons fat.
Add onions and garlic and saute until translucent.
Chop tomatoes to a coarse texture and add to pan. Simmer on high.
Stir often, 15 to 20 minutes.
Add crumbled bacon, oregano, red pepper flakes, salt and pepper to taste.
Cook 5 minutes more.
Serve immediately over favorite pasta.
Garnish with fresh grated Parmesan or Romano.
