Onion Soup Au Gratin
A bistro French onion soup with deeply caramelized onions in beef broth, ladled over toasted bread and broiled under a crusty cap of melted Swiss or gruyere.

Melt butter in a large soup pot.
Add onions and wilt over medium-low heat, covered, 10 minutes.
Stir occasionally. Sprinkle sugar over onions; toss.
Cook, uncovered, until caramelized, 10 minutes.
Salt and pepper.
Add 3 cups of stock; simmer, uncovered, over medium heat for 15 minutes.
Add remaining 3 cups of stock and wine.
Cook until rich in taste, about 30 to 40 minutes.
