Pour boiling water over oats and salt; let stand 1 hour. Dissolve yeast in 1/4 cup warm water.
Add yeast to oats after they have stood 1 hour.
Add remaining ingredients in order. Knead in enough flour (any extra should be of whole wheat as there is enough white to allow this bread to be light) to make a smooth velvety dough.
Let rise to twice original size.
Knead down. Shape into 2 loaves, place in oiled bread pans and cover.
Let rise to 2/3 finished size (allowing for 1/3 rise in oven) and bake about 1 hour at 350Β°.
A delicious sandwich bread.
Try it with mayonnaise and alfalfa sprouts.
