Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1 c. sugar, 1/4 c. flour, 1 c. water, 3 egg yolks and 1 lemon, grated rind and juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine 1 cup sugar, flour and a "little" of the water.
Mix until smooth.
Beat egg yolks; add to sugar mixture.
Stir well. Add remaining water.
Cook over hot water until thick, stirring constantly.
Cover; cook 10 minutes.
Remove from heat.
Add lemon rind, juice, salt and butter or oleo.
Mix well.
Pour while hot into (chilled) pie crust.
Whip egg whites until stiff, but not dry.
Add sugar gradually, beating constantly.
Swirl on pie.
Bake in moderately low oven at 325Β° for 15 to 20 minutes.
