Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1 c. sugar, 4 tbsp. cornstarch, 3 tbsp. flour, 1/4 tsp. salt and 2 c. boiling water, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In top of double boiler, mix sugar, cornstarch, flour and salt. Add slowly the boiling water, stirring to mix well.
Place over the double boiler pan; cook for about 20 minutes, stirring occasionally.
Slightly beat egg yolks; add grated rind and juice. Add slowly to cooked mixture and continue cooking for about 3 minutes.
Do not overcook.
Remove from heat; set aside and add 1 tablespoon butter.
Cover with meringue after pouring in already baked shell.
Make meringue of 3 egg whites (beaten stiff).
Add gradually the sugar and salt.
Bake meringue covered pie for about 15 minutes in 320Β° oven.
