Kim Chee(Pickled Cabbage)
Kim Chee(Pickled Cabbage) is an moderately easy dinner. Made with 2 lb. cabbage head or chinese cabbage, cut in 1-inch pieces, 2 red chili peppers, minced, or 2 tbsp. dried chili powder, 1 clove garlic, minced, 1 stalk green onion, chopped and 1 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Soak cabbage overnight in 1 quart of water with 1/4 cup of salt.
Next morning drain all but 1/2 cup of water.
Add rest of ingredients and mix well.
Press tightly into quart jars and cover.
Let stand at room temperature for 4 days.
Refrigerate. Serve cold.
